Makes 24 cookies
It’s double the fun and double the treats with these adorable Valentine’s Day Chocolate Sandwich Cookies. The sprinkles make them look super sweet for the big day.
2 cups all-purpose flour
1/4 cup NESTLE TOLL HOUSE Baking Cocoa
1/4 teaspoon salt
1/4 teaspoon baking soda
1 cup (2 sticks) unsalted butter
1/2 cup granulated sugar
1/4 cup packed dark brown sugar
1 large egg white
1/2 teaspoon vanilla extract
1 cup NESTLE TOLL HOUSE Semi-Sweet Chocolate Morsels
1.Preheat oven to 350 degrees. Set aside baking sheets lined with parchment.
2.Sift together flour, cocoa, salt, and baking soda in a small bowl.
3.Mix together butter, granulated sugar, and brown sugar until thoroughly combined. Add egg white and vanilla extract until combined. Add flour mixture in 2 installments and mix until combined.
4.Roll dough to 1/4-inch thickness, and cut cookies using desired heart shaped cookie cutters. Be sure to have matching pairs of cookies for each sandwich cookie. Bake cookies 8-10 minutes (depending on size), until edges are firm. Remove baking sheets from oven and place on cooling rack. Let cookies cool to room temperature.
5.Microwave morsels in a small microwave-safe bowl on HIGH (100%) power for 45 seconds to 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Let the chocolate come to room temperature as you wait for the cookies to come to room temperature as well.
6.Place a dollop of melted morsels into the center of one of the cookies. Place the matching pair cookie on top and create the sandwich. Repeat with remaining cookies and let chocolate set before eating. If desired, dip completed sandwich cookies into remaining melted chocolate and decorate with Valentine’s themed sprinkles.
