Leprechaun Hat Cupcakes

Makes 24 cupcakes

 

All the leprechauns love this recipe for some St. Patty’s Day fun.

INGREDIENTS

1 box PILLSBURY MOIST SUPREME White Cake Mix, or your favorite variety
Additional ingredients to prepare cake mix per package instructions

1 tub PILLSBURY CREAMY SUPREME White Frosting

Orange food coloring

1 package sandwich cookies

1 package marshmallows

1 package dark green candy melts

2 tablespoons shortening

Shamrock marshmallows from cereal (optional)

 

DIRECTIONS

1.Prepare cake mix according to package instructions using water, oil, and egg whites to make 24 cupcakes. Cool completely.

2.Melt dark green candy melts and shortening in microwave according to package instructions. Cover each sandwich cookie with the mixture, then place it on a piece of parchment paper. Coat a marshmallow, then add to the top of the cookie; set aside to firm up. Repeat with remaining cookies and marshmallows. Reheat the candy melt mixture, as necessary, throughout the process. When set, coat the back of a lucky green marshmallow with candy melt mixture, then adhere to the hat.

3.Combine frosting and food coloring. Frost cupcakes, then add the hat to each.
