Island Wildberry Muffins

Makes 12 muffins

INGREDIENTS

No-Stick Cooking Spray
2 (7 oz.) packages Martha White Wildberry Flavored Muffin Mix
1 cup milk
1 (8 oz.) can crushed pineapple in pineapple juice, drained
1/2 cup chopped macadamia nuts
1/4 teaspoon coconut extract
Toppings, optional
1 tablespoon corn syrup
1/4 cup toasted coconut

 

DIRECTIONS

1.HEAT oven to 425 degrees. Coat 12 medium muffin cups with no-stick cooking spray or line with paper baking cups.

2.COMBINE muffin mix, milk, pineapple, macadamia nuts and coconut extract in mixing bowl. Stir just until moistened. Fill muffin cups about 2/3 full.

3.BAKE 14 to 17 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 2 to 3 minutes in pan. Remove from pan. Brush muffin tops with corn syrup and sprinkle with toasted coconut, if desired.
