Makes 24 cupcakes
Topped with fun stars and rosettes, these Happy Valentine’s Day Cupcakes are a great way to show someone how much you love them. Easy for beginning decorators, these cupcakes are also topped with Valentine’s Day sprinkles for added flavor and texture. Surprise the kids when they get home from school or sneak a cupcake (or two) into their lunch for a fun Valentine’s Day surprise!
3 cups cake flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter, softened
1 1/2 cups granulated sugar
1 1/2 teaspoons vanilla extract
1 1/4 cups milk

1.FOR CUPCAKES: Preheat oven to 350ºF. Line 2 12-cup heart-shaped muffin pans with baking cups.
2.In large bowl, combine flour, baking powder and salt; set aside.
3.In second large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, and vanilla; mix well. Add flour mixture alternately with milk, beating well after each addition. Continue beating one minute. Divide evenly into prepared cups.
4.Bake 19 to 23 minutes, or until toothpick inserted in center of cupcake comes out clean. Cool cupcakes in pan on cooling grid 5 minutes.
5.TO DECORATE CUPCAKES: Tint 1/2 cup cup icing purple, using violet from the gel colors, and combine with pink (ratio is 1:1). Using pink icing color, tint 1/2 cup icing pink. Using Burgundy icing color, tint 1/2 cup icing burgundy. Using Aster Mauve icing color, tint 1/2 cup icing medium mauve. NOTE: Use these same measurements to double icing recipes for heavier decorated cupcakes.
6.Prepare four decorating bags separated with tips 21 and 18. Fill bags separately with desired icing.
7.Pipe stars and rosettes to to cover cupcakes, varying colors and sizes.
8.Top cupcakes with desired sprinkles.
