FUNFETTI Easter Cakesicles

Makes 20 cakesicles

 

Fun and festive for Easter…even the kiddos can get in on the fun to decorate these tasty treats.

INGREDIENTS

1 box PILLSBURY FUNFETTI Spring Cake Mix

Additional ingredients to prepare cake mix per box instructions

1 tub PILLSBURY FUNFETTI Spring Vanilla Frosting

Cakesicle mold and popsicle sticks

Colored candy melts (2 bags)

Piping bag

Piping tip (number 4)

 

DIRECTIONS

1.Prepare cake mix according to package instructions using water, oil and eggs. Bake in 13 x 9-inch baking pan according to package instructions. Cool completely.

1.Crumble cooled cake into extra-large bowl. Beat with mixer on medium speed until fine crumbs, about 2 minutes. Spoon 3/4 of the tub of FUNFETTI spring frosting over cake crumbs and reserve the remaining frosting. Beat until evenly blended. Cover and freeze 30 minutes.

3.Line a baking pan with wax paper. Roll cake mixture into 1 inch balls. Chill in fridge for 30 min.

4.Melt candy melts in medium microwave-safe bowl. Microwave in additional 30 second intervals until completely melted and smooth when stirred.

5.Coat the cakesicle molds with candy melt until all sides are completely covered. Add popsicle sticks. Transfer to freezer for 15 minutes to chill. Remove from freezer and add 1 cake ball to each mold, pressing the cake into the cakesicle mold. Cover the cake completely with candy melt. Put the candy melt back into the microwave if it has hardened while sitting out. Transfer to the freezer for 30 minutes. 

6.Remove cakesicles from the freezer. Carefully release each cakesicle from the mold, gently peeling back the silicone mold around the cakesicle. Place on a plate.

7.Spoon the remaining 1/4 tub of FUNFEETTI spring frosting into a piping bag fitted with piping tip number 4. Pipe designs onto cakesicles and top with sprinkles from frosting tub.
