Our Coffee Cake has been a classic in our cafés for almost as long as they’ve been open. Bring the quintessential sweet treat home in all its cinnamon swirly goodness with this recipe. Enjoy alongside a cup of rich and lively Breakfast Blend coffee for a delicious combination of sweet morning flavors.
GREEK YOGURT CAKE BASE
12 tablespoons unsalted butter
1 1/2 cups granulated sugar
3 large eggs
1 1/2 tsp vanilla extract
1 1/4 cups Greek yogurt
2 1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1/3 cup light brown sugar, packed
2/3 cup all-purpose flour
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
4 tablespoons unsalted cold butter, cubed
1.Preheat oven to 325°F.
2.In a large bowl, mix together room temperature butter and sugar; should be light and fluffy, do not overwhip.
3.Stop and scrape down the sides and bottom of bowl.
4.Now, add in one egg at a time, mixing in between each addition. Stop and scrape down the sides and bottom of bowl.
5.Combine the vanilla extract and Greek yogurt.
6.In a separate bowl, combine the flour, baking powder, baking soda, and salt.
7.Add one-third of the flour mixture to the egg mixture, followed by one-third of the yogurt mixture. Repeat two more times until all the ingredients are incorporated.
8.Combine all cinnamon streusel ingredients with a fork until they reach a crumbly consistency; do not overmix into paste.
9.Fill one-third of a greased muffin tin or mini loaf pan with batter, sprinkle thin layer of cinnamon streusel mixture of top of batter, then repeat process one more time so that muffin tin or loaf pan is two-thirds filled with streusel on top.
10.Bake for 12–15 minutes, let cool, then serve and enjoy alongside a freshly brewed cup of STARBUCKS Breakfast Blend coffee.
