Adding applesauce makes muffins extra soft and moist. Adding butterscotch chips and a butterscotch streusel gives them a warm sweetness. Since this recipe has all those things, it’s sure to be a huge hit.
1 – 1/2 cups all-purpose flour
1/2 cup sugar
2 tsps baking powder
1/2 tsp salt
1/4 tsp ground cinnamon
1 egg, slightly beaten
1/2 cup milk
1/4 cup vegetable oil
3/4 cup HERSHEY’S Butterscotch Chips
3/4 cup chunky applesauce
1/2 cup chopped nuts (optional)
1/4 cup all-purpose flour
1/4 cup packed light brown sugar
2 Tbsps butter or margarine, softened
1/4 cup HERSHEY’S Butterscotch Chips1/4 tsp shortening (do NOT use butter, margarine, spread or oil)
1.Prepare Butterscotch Streusel; set aside. Heat oven to 350°F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups.
2.Stir together flour, sugar, baking powder, salt and cinnamon in large bowl. Add egg, milk and oil; stir just until blended. Stir in butterscotch chips, applesauce and nuts, if desired. Fill muffin cups 2/3 full with batter. Sprinkle 1 tablespoon streusel mixture on top of each muffin.
3.Bake 20 to 25 minutes or until wooden pick inserted in center of muffin comes out clean. Cool in pan 10 minutes; remove to wire rack.
Combine 1/4 cup all-purpose flour, 1/4 cup packed light brown sugar and 2 tablespoons softened butter or margarine in small bowl; mix with fork until crumbly. Stir in 1/4 cup HERSHEY’S Butterscotch Chips.
